Banana and Raisin Muffins

I found this recipe online and loved it so much I made a couple of amendments to make them even more tasty. They are so quick and easy to make and the bananas make them really sweet so no need for sugar.

1 large banana well mashed
1 egg
100g self raising flour
30g butter
A pinch of nutmeg or cinnamon
A handful of raisins

Mix all the ingredients together and put into silicone muffin tins (or well greased muffin tins) and bake at 190 degrees for 15-20 mins. Leave to cool in tins then turn out and enjoy! Can be frozen by wrapping each in clingfilm and defrosted by leaving out for a few hours or zapped in microwave.

    • Hi no I don’t put milk in as the egg and banana make it moist enough but if you wanted you could add a bit. Thanks

      • Which are the muffins that you said contain milk and therefore good for afternoon snack then?

  1. Hi – it makes 6 for me but my muffin cases are really deep so for normal size cases / tins I expect about 8? I also make mini ones too. Thanks
