Carrot and apple stars biscuits

I find the most successful recipes are usually the simplest ones. Todays MyMiniMeals Mates Monday recipe is from a lovely lady called Jude on my FB group who showed us all these delicious carrot and apple star biscuits and so far everyone who has made them has loved them. They are so easy to make and are great for a snack or dessert and freeze beautifully. They don’t contain any refined sugar but they do have some honey so aren’t suitable for under 1’s. You could remove the honey if you liked and I am sure they would be as yummy just not as sweet.

1 small carrot grated
1 small Apple grated
Cinnamon to taste. 
1 tablespoon honey
25grams butter
1 cup of flour

I mixed it all together, cut into stars and baked for around 10 mins on 180.11034233_10153723004765616_6238936131155176969_n

  1. Hi. I just made these.. They’ve been in oven for over 20m and are still quite soft like the have moisture still inside. Are they meant to be completely dry rather then moist? Thanks

    Just made these for my little boy (and me….!!). They were really really easy to make, quick to make, and quick to cook. They have gone down a treat, he loves them. I get to feel smug that he has eaten some carrot!

  3. These are very simple but taste amazingly sweet. I used self raising flour so they were thick and spongy. They’ve gone down a treat with my sick son who wasn’t eating so definitely a winner here. I would definitely recommend doubling quantities though as if the kids like them they won’t last long.
