Child friendly chicken nuggets 

It’s MyMiniMeals Mates Monday so today I am showing you all a great recipe from a lovely lady called Esther – Homemade chicken nuggets. Esther claims she isn’t a good cook but she made up this recipe and they are so delicious! They actually taste better than chicken nuggets you find in certain fast food outlets or in freezer packets. And the bonus is they have added veg in them so are ultra healthy too. I made them and they were a huge success with my two kids. This recipe below uses carrots but I added broccoli and cauliflower so you really can use any veg. Over to you Esther!

2 boneless and skinless chicken fillets (or de skin ones with skin on)

1 medium carrot – sliced

Bowl of breadcrumbs (either from a packet or make your own by whizzing a slice of bread or pita in a food processor)

Boil the  chicken fillets and the carrots (or other veg) in a pan of water then simmer for 10-15 minutes into the chicken is cooked through and the veg are soft. Remove from the pan and drain. Put the chicken and veg into a food processor and whizz it until it’s all mixed together. It won’t look that appetizing at this stage. With your hands roll small handfuls into balls and squish a bit. Then dip them into the breadcrumbs so both sides are covered. Place on a well greased baking tray or non stick baking sheet and cook in the oven for 25-30 minutes (turning halfway) on 180 degrees C. Remove from the oven and serve or leave to cool and freeze. Yummy!!

  1. I have just made these with carrots, peas and sweet corn and it is a bit dry (for me!) but assuming they usually come out dry as there’s no other moisture included?!
