Colourful Fried Rice

We like to take the kids out for dinner at the weekend and our favourite is a well known restaurant where they serve lots of noodle and rice based dishes.  I always order a fried rice dish for Little Lady. She used to eat most of it but recently (as she is going through a very fussy annoying phase) just picks out the sweetcorn and meat from it but I keep persevering!  I thought I would try to recreate something similar at home as fried rice is a great way to incorporate carbs, protein and veg into a meal.

You can use any kind of meat or even shellfish in this meal. This makes 4 toddler size portions so if you want to make less just amend the ingredients appropriately.

1 small onion

1/2 clove of garlic

1/2 pepper (any colour)

2 florets of broccoli

Handful of frozen peas

Handful of frozen sweetcorn

1 egg

200g beef, chicken, pork or turkey cut into strips or 200g of prawns (or try mixing it up).

Baby stock or low salt stock cube (veg or fish cube)

100g uncooked rice

Cook the rice in a pan of water with the stock cube melted into it. Chop the onion and garlic very finely then fry in some olive oil until they are translucent. Cut the meat or shellfish into bitesize pieces then add to the pan with the onions and garlic and cook until it is browned. Chop the pepper and broccoli into little pieces and add it to the pan along with the corn and peas, and fry for a few minutes until it is all cooked. Drain the rice (keep the stock) and add it to the meat, rice and veg with a few tbsp of the stock. Add a dash of soy sauce if you want. Meanwhile make an omelette or scrambled egg in another pan and add it to the meat, rice and veg mixture then serve. 

Depending on your views about reheating rice (I am not advising for or against this) you can freeze this in portions.
