Easy Egg Free Recipes

I realised recently that most of my recipes – particularly my “baking” ones (I can’t really call what I do baking!) – contain eggs. I have a few friends with children who are allergic to egg so whenever I am making them meals I have to come up with egg free recipes. Here are my 3 favourite easy egg free recipes.

Eggless Eggy Bread:

1 medium banana (the browner the better!)

90ml milk (or non dairy alternative)

A pinch of cinnamon and nutmeg

2-3 slices of bread

Mash the banana really well then mix with the milk and spices until you get a creamy mixture. Dip the bread into the mixture and let it soak for a minute or so to make sure that the bread is fully covered in “banana milk”.  In a frying pan heat up some butter or oil and fry the bread until both sides are nice and brown. Serve immediately.

Eggless Blueberry Pancakes:

4 oz plain flour

Pinch of baking powder

120ml milk (or dairy free alternative)

1tbsp vegetable oil

1 tbsp water

Handful of blueberries (probably about 15)

Mix the milk, oil and water until fully mixed. Cut the blueberries in half then add to the milk mixture along with the flour and baking powder. Heat some oil or butter in a frying pan then drop spoonfuls of the mixture onto the pan and fry for about 2-3 minutes on each side until they are lightly golden. Serve immediately.

This is my favourite all time recipe and my first ever creation! These “flapjacks” are just so simple to make and even though the original recipe is really only 2 ingredients you can add in any fruit, nuts or seeds you wish. Little Lady particularly likes chopped dried apricots in hers and banana also makes them really lovely and sweet. I also find fruit purees with other fruits in addition to apple really give them a great flavour – our current batch are made with apple and cherry puree and chopped apricots
