Easy Peasy Cheesey Scones 

I make these cheese scones ALL the time as they are one thing The Boy actually loves. We first made them in a kids cooking class we went to a few years ago but the recipe is everywhere online too. I have always made them with my star shaped cutters so the kids call them “Cheesey Star Scones” but obviously you can make them any shape you like. They are completely delicious and really useful for lunch boxes, a snack (The Boy frequently has them when I pick him up from school) or as part of a meal. I sometimes put Marmite in them but they work as well without. You can also add in some Greek Yoghurt which just gives them a slightly more sour taste but again this isn’t essential. I have also added in some tomato puree a couple of times and this gives it a slightly tomatoey flavour and a redder colour. But usually I just stick to the basic recipe and they always get eaten quickly.

This  recipe makes about 12 scones but you can obviously make more or less depending how big your cutters are or you can halve or double the quantities of ingredients to make more or less.

250g Self Raising Flour

1tsp Baking Powder

50g Butter

100g grated cheese

1 egg

3 tbsp milk

Optional Extras:

1 tbsp Marmite / Vegemite

1 tbsp tomato puree

2 tbsp Greek Yoghurt

Put the baking powder, butter and flour into a bowl and with your fingertips mix it all together so that it looks a but crumbly and like thick breadcrumbs. Add all of the other ingredients and mix it all together with a spoon until you get a thick sticky like dough. If it is too sticky to handle then just sprinkle in some more flour until you get a less sticky texture. Flour a work surface or chopping board and turn the dough out onto it. With the palm of your hand flatten the dough out until its about 2cm thick then, using your cutters, cut out shapes. Any bits that are leftover just bring back together with your hands into another ball of dough and flatten again and cut again. Put the shapes onto a non stick baking liner (I love the Delia Smith Online Baking Sheet Liners) or some baking / greaseproof paper. Brush the top of them with some milk and sprinkle on some more cheese then cook on 190 degrees C for about 10-12 minutes. They should be lovely and golden once done so keep checking them. Leave to cool for a while then enjoy! They freeze beautifully and defrost left out on the side really quickly.

  1. Hi Francesca, just trying this recipe and wondered if they really need to be 2cm thick because that is very high? Currently they are about 1cm, which looks pretty thick seeing as they will also rise… Kate x

  2. I added marmite and tomato puree and a sprinkle of mix herbs yum!! Little one really enjoyed cutting them out x
