Fruit puree and raisin muffins

Neither of my kids eat fruit puree anymore but I still use it on a regular basis to make my “Baby Flapjacks”  . I have recently discovered that it makes a great addition to other recipes. I am experimenting with various ideas using puree so watch this space but one thing I have made that goes down well with Little Lady and The Boy (and Mr Mini Meals too!) are fruit puree muffins. I have added raisins as I like to get as much fruit into my kids as possible but they aren’t necessary – and you could susbtiute for other dried fruit too, like dried cranberries or chopped apricots. I use ready made fruit puree pots (honestly I have neither the time or energy to puree my own fruit but if you want to please go ahead!) which are readily available in all supermarkets in the baby food aisle. They are a really yummy breakfast idea or a snack. 

150g any flavour fruit puree

150g plain flour

1.5 tsp baking powder

100 ml milk

1 egg

50g raisins

A pinch of cinnamon / nutmeg

Mix everything together and then spoon into silicone or well greased muffin tins.

Cook on 190 degrees C for 30-40 minutess. Mine took 40 minutes as my muffin cases are really deep so base your cooking time onnhow big/deep your cases/tins are. This recipe makes 6 muffins in my deep muffin cases (although one happened to “fall” into my mouth before I took this photo!).

    It looks very good but i have aslo some questions. You use fruit puree in muffins but it mean aslo they are healthy too ? right ? I am just looking healthy but good snacks recipes. Does it matter what fruits I use ?

    • Hi yes as they don’t have refined sugar in them they are healthier than those with sugar. Any fruit will do. Thanks
