Here in the UK it’s Pancake Day next week and everyone goes crazy making pancakes for breakfast, lunch, dinner and snacktime. Here are some great recipes for yummy pancakes that are all refined sugar free and perfect to make for all the family.
Basic sugar free pancake recipe :
This is exactly what it says. A very basic sugar free pancake recipe. In all honesty it doesn’t taste of much but it’s a great base for other ingredients such as fruit, veggies, honey or chocolate.
100g plain flour
1 tsp of baking powder
Whisk together eggs and milk. Slowly add the flour and baking powder. Mix until smooth.
Pour the batter into a frying pan to wgatever size of pancake you want to make. Fry over a medium heat and once the top of the pancake bubbles slightly turn it over. Cook the other side until slightly golden. Remove from the pan and use the rest of the batter until all your pancakes are made. Keep making pancakes until all batter is gone.
Here is a basic egg free pancake. Again it’s pretty bland and basic but like the standard recipe you can add in whatever you like to jazz it up.
Egg free pancakes:
75g plain flour
1/2 Tablespoon baking powder
1 tbsp vegetable oil
1 tbsp water
Mix together flour and baking powder. Mix the oil and the water together then add to the dry ingredients and stir to combine. The method now is the same as above. .
Here is a post I did with lots of different kinds of pancakes – Pancakes Galore. One of my favourite recipes from that post are the Banana and Raisin Pancakes. They are totally yummy and originated from another recipe that’s all over the internet that just used roughly 1 egg and 1 banana but I personally think they taste of banana flavoured scrambled eggs so I add in some flour which improves them greatly.
Other ways to make the banana (and flour) pancakes different:
- Add in a pinch of baking powder which makes them fluffier.
- Vanilla extract makes them taste a bit like a birthday cake
- A pinch of spices (like cinnamon or nutmeg) or some chopped nuts makes them feel a bit more grown up!
- A couple tablespoons of peanut (or other nut) butter makes these taste really really delicious!
It’s naughty and maybe best made when the kids are in bed but oh my how yum!!
