Meatloaf muffins 

It’s Monday and for MyMiniMeals Mates Monday my lovely friend Anna has given me her delicious and totally easy Meatloaf Muffin recipe. This is a bit like my Any Mince Burger recipe but they are a bit firmer and stick together really well from being made in a muffin case so are perfect for little fingers to pick up. Anna’s original recipe uses beef mince but you can try it with any mince you like or even mix minces. I hope you enjoy!

250g minced beef

110g bread crumbs

1 small carrot grated very finely

1 egg

150ml milk, breast milk, formula or dairy free substitute

A pinch of garlic powder or half clove crushed garlic

Mix all the ingredients in a bowl with a fork making sure everything is mixed well. Spoon the mixture into muffin tins. Cook in the oven for 25-30 minutes on 180 degrees. Leave them in their tins/ cases to cook then when they are cool take them out and serve. You can freeze them wrapped in clingfilm. This makes about 10 muffins if you use the tiny muffin cases or about 6 if you use regular size ones. If you use the mini cases then check on them at about 18-20 minutes as they will cook quicker.

  1. Can the milk be substituted for water or stock? I’ve 1 dairy/soya free boy and another nut free boy… Don’t really want to use rice milk but will if you say ‘milk’ is better than stock…. ?? ☺ Thanks

    • Hi to be honest I don’t know but I can’t see why it wouldn’t work with milk as its really the egg that binds it all. Let me know how they turn out! Thanks
