Old favourites – with a twist!

MyMiniMeals recently celebrated our 1st birthday and I was looking back at recipes I posted in the beginning. I realised that although I still make them a lot I also regularly make changes to them and so I thought I would show you a few ideas using old favourite but with a twist.

Banana Pancakes – Twisted into “Muffins”

These are still a firm favourite in my house and we have them quite regularly. However a few weeks ago I wanted to see what they would be like baked instead of fried. I followed the original recipe and mixed up all the ingredients but spooned the batter into silicone muffin cases (to a few cm thick) and baked in the oven on 180 degrees for 20 minutes. And voila the easiest “muffins” were made and devoured by my family!!!

Tuna Melt Couscous Muffins – Twisted into Salmon and Spinach Melt Couscous Muffins & Tuna Melt Couscous Loaf

We LOVE tuna melt couscous muffins here and they are really popular with all my lovely MMM friends. However I also frequently replace the tuna with tinned or poached salmon and the corn with cooked spinach and they are (nearly) as yummy!. I have also used both sets of ingredients and instead of making individual muffins I have put the whole mixture into a loaf tin and cooked it whole then served in slices. Yummy!!

Baby Flapjacks – Twisted into “Chocolate” Flapjacks, Prune Flapjacks and Peanut Butter Flapjacks. 

This recipe was the first I posted on this site. Since its creation I have amended it many times but Little Lady has 3 “twisted” favourites . Firstly I have added a tbsp of cocoa powder to the original recipe and call them “Chocolate Flapjacks” and she loves them. Secondly I have replaced the fruit puree with an Ella’s prune pouch and some chopped prunes and give them to her when she “needs a little help” moving things on!! And finally I have used the original recipe but added in a tbsp of peanut butter and even The Boy seems to like these!

Yummy Chewy Biscuits – Twisted into Yummy Chewy Chocolate Biscuits, Yummy Chewy Peanut Butter Biscuits and Yummy Chewy Chocolate Chip Biscuits 

I make these biscuits a few times a week because a) The Boy eats Weetabix a lot for breakfast so I always have crumbs leftover in the box b) they are a great way to use up brown bananas and c) Little Lady goes crazy for them. I have made 3 other versions of them and they have all been really successful. As with the Chocolate Flapjacks above I have simply added a tbsp of cocoa powder to the original recipe and turned them into “Yummy Chewy Chocolate Biscuits”. Just one tbsp of Peanut butter added to the original recipe gives a hit of protein and if you use crunchy peanut butter an extra crunch! Finally, and these are a bit naughty (but if you use dark chocolate chips the sugar content is very small), a few chocolate chips added to the mixture gives them an extra level of yumminess.

Sweet Potato Biscones and Easy Peasy Cheesey Scones – Twisted up into Easy Peasy Cheesey Sweet Potato Biscones

The other day I was making some biscones (which incidentally are the most popular recipe on my site) and had some cheddar that needed using up. I simply grated 100g into the mixture and hey presto the Easy Peasy Cheesey Sweet Potato Biscone was born! The Boy loved them as much as both of the originals so I think these may be a staple in our kitchen going forward.

Broccoli and Cheese Breadcrumb Bites – Twisted up into Tuna, Salmon, Cod or Chicken Veggie Breadcrumb Bites 

These breadcrumb bites have been a phenomenal success both in my household (clearly not with The Boy though) and with my MMM friends. Since I created the original recipe I have also changed it a bit. I have used the original recipe but added in a small tin of tuna, a tin of salmon, a small fillet of poached salmon or some poached cod pieces and they are delicious. I have also changed the broccoli for other veggies and as long as they are cooked prior to baking and chopped very finely most veg seem to work with the basic recipe!

  1. Just wanted to say how impressed I am with your commitment to this site you’ve made. I’ve loved trying many recipes over the years. Sadly, my 3.5-yr-old is still the fussiest thing in the world, but he sometimes goes for things you post recipes for. In contrast, my nearly 11-month-old eats anything!

    Also, I just found a way of getting veg into my son: chop up veg (sweet potato, carrots, broccoli, whatever) really finely in processor, add 2 eggs, 125g plain flour & 1tsp baking powder. Make pancakes out of it (Scotch style). I just don’t let him see me make the mixture!
