Simple Salmon Bites

I buy a lot of salmon and Little Lady eats it quite often. I usually make her Salmon with Broccoli and Cheese tomato sauce or Salmon and Broccoli Fishcakes but today I fancied making something that didn’t use flaked or mashed salmon. So I came up with these ever so easy, ever so tasty and ever so simple salmon bites. They only took me about 20 minutes from start to finish and were gobbled up by my little pink dustbin in no time.

1 salmon fillet (ideally skinless and boneless but if not skin it and make sure there are no bones)

1/2 small carrot very finely grated

50g breadcrumbs or matzo meal (I made breadcrumbs by whizzing up a nearly stale pitta in my blender)

25g parmesan (optional)

1/2 garlic clove crushed or 1/2 tbsp dried or frozen garlic

Black pepper

1 egg beaten

1/2 tsp cayenne pepper (optional)

Cut the salmon into cubes.

Mix all the other dry ingredients together. In one bowl put the breadcrumb mix and in another the beaten egg. Dip the salmon into the egg then into the dry mix. Lay on a baking sheet and spray or brush lightly with a little bit of cooking oil.

Bake in the oven at 180 degrees C for 15 – 20 minutes until the breadcrumbs are golden and the fish is firm to the touch.

Although I used salmon this would work with any other firm fish like cod loin, haddock or tuna and you could also use chicken (that’s next on my list). The cubes can be frozen and then defrosted. This recipe made 8 cubes (I had to try one before I took a photo!) and Little Lady ate 3 so this would serve 2-3 children depending on their appetite. Obviously if you wanted to make more then increase the quantities of the ingredients although, unless you are using more than 2 fillets, you will still only need 1 egg as I had lots left over from my one fillet.

  1. Hi, these salmon bites came out so nicely, however once I’d defrosted and reheated them they unfortunately went quite dry and chewy! How would you recommend reheating them? I did use the microwave! Thanks xx

    • I’m sorry to hear that. Mine always turn out nice and moist once defrosted. I have done it by leaving out to defrost then microwave for only about 30 seconds or defrosting completely in microwave and they get heated up that way. How long did you use microwave for?
