Super quick breakfast ideas

In my household breakfast (especially on weekdays) is a really rushed experience and I have been giving my kids the same thing every day as I know a) they will eat it and b) I haven’t got time to think of different things to make them. The Boy tends to have the same cereal every day and Little Lady (who eats once we are home from school run) has toast or a different brand of cereal. But I have recently started (especially for Little Lady as she is my guinea pig and eats most things) giving them different things. At the weekend we all eat as a family and have more time to make different things (I frequently make 4 different breakfasts!) but I am slowly starting to give everyone the same thing that I have made from scratch (much to The Boy’s horror!).

Here are a few things I have been making recently that have gone down well with my kids and Mr Mini Meals and they really are ridiculously quick to make!

Banana and raisin pancakes

This idea came from another “recipe” I was told about that just used bananas and eggs, mixed together and then fried. Its worth trying as its really quick but in all honesty I think it tastes like banana flavoured scrambled eggs which isn’t appealing in the slightest to me! So I made a slight amendment to it and now it makes really yummy, and most importantly quick, banana pancakes.

1 egg
1 mashed banana
3 tbsp plain flour
1 tbsp raisins

Mix all ingredients together then spoon onto a hot pan with some oil. Fry for about 3 mins each side.

Fruit puree pancakes

This is just a variation on the above pancakes and works well with shop bought or homemade fruit puree.

1 pot fruit puree (or 100g )
4 tbsp flour
1 egg
Pinch of cinnamon

Mix all ingredients together then spoon onto a hot pan with some oil. Fry for about 3 mins each side.

Both these recipes make about 6 American style pancakes.

Eggy bread

Such an easy thing to make and can actually be eaten as a sweet dish or as a savoury one. Mr Mini Meals likes it savoury but the kids and I like it sweet (although Little Lady isn’t allowed too much sugar which my mum can’t quite understand!).

1 egg

2 tbsp milk

4 slices bread

Optional:

Cinnamon

Nutmeg

Cocoa powder

Mix the egg and milk in a shallow dish. One at a time soak a piece of bread in it – turning so that each side gets a good dip. Heat some olive oil or butter in a frying pan and cook the bread for 2 minutes on each side. Can serve on its own or sprinkle sugar, honey, salt or anything really onto it. Its yummy with sliced bananas or strawberries and icing sugar on top. Mr Mini Meals eats it with some salt sprinkled on and dipped in ketchup.

Porridge Fingers

This recipe is widely available all over the internet and was actually the precursor to my Baby Flapjack recipe. I tried it and, in all honesty, took a few goes to get something edible out of it but Little Lady seemed to like it and its a really popular BLW recipe. I personally prefer the taste of my flapjacks (not that I am biased!) but this is good if you are really pushed for time and can’t spend 20 minutes on the flapjacks.

3 tbsp of porridge oats

3 tbsp of milk

Mix the oats with the milk and let it soak for a few minutes so the oats are softer. Put the mixture into a flat bottomed bowl and squash it down so it’s flat. Cook in the microwave on full power for 2 minutes. Let it cool a bit then turn out and cut into fingers. Its not attractive and kind of rubbery but works well.

Variations:

Add half a mashed banana, raisins, berries or other dried fruit into the mix. Little Lady likes dried apricots and clearly The Boy won’t go near them!

Drop Scones

These are basically thick pancakes but aren’t sweet so you can sweeten them up by adding fruit if you like but we prefer them savoury. I sometimes add cheese or some veg to them and they also make a great snack, lunch or dinner idea.

250g self raising flour
2 eggs
250ml milk

Mix the flour and eggs with a whisk or fork then add the milk slowly until the mixture is thick with no lumps. Spoon dollops onto a hot frying pan that has some butter or oil in it and cook each side for 2-3 minutes.

I just wanted to add a final suggestion that isn’t a recipe at all and can’t remotely be called cooking but before I started feeding Little Lady more BLW style / finger food I hadn’t even come across it. Yet again lots of BLW sites suggested it as a really quick breakfast idea that is great for babies learning to feed themselves. Simply soak some bitesize Shredded Wheat in some warm milk for a couple minutes then let baby loose. Little Lady absolutely adores this and would happily have it every day for every meal if she could. I also give it to her for dessert sometimes or a late afternoon snack. Its pretty mess free (unless like Little Lady your baby likes to poke their fingers into it and then flick it across the room!) and great for improving pincer grip. Also its completely sugar free which is always a bonus.

  1. Thx for the breakfast ideas! My 8month lg won’t take anything off a spoon so I find it limits what I can give her. Just wanted to ask if the milk you use for the bitesize shredded wheat is cows milk or formula? Ive used cows milk to make her porridge and poach fish before but been a bit unsure about using cows milk in otherways before she’s 1. TIA 🙂

    • Hi Mechele – I use cows Milk
      As my little girl is 16m but I have been using it on cereal since she was 6m which is what the guidelines say you can do if there is no allergies. But if you prefer you can use formula on it too. Thanks

  2. Thank you for your pancake recipes! My kids love them!! Even my incredibly fussy toddler wolfed down the apple puree pancakes last week and demanded I made them again this week, and he’s eaten them again!!!! That’s a record! Thank you!

  3. Thanks for this website – such great ideas. My 8m daughter has decided she wants to feed herself but can’t use a spoon so was struggling for breakfast ideas. Can you freeze the porridge fingers? Should unfrozen be stored in the fridge?
