Sweet Potato Heaven

I LOVE sweet potatoes. The Boy isn’t so keen (sigh). Little Lady pretty much likes anything. Mr MMM would probably marry a sweet potato if he could! I have given up trying to get The Boy to eat them but I use them a lot in my cooking so here are some great ideas using these yummy potatoes.

3 Ingredient Sweet Potato Biscones

I posted these a few weeks ago and they were a huge hit. They came about as a mistake as I had the wrong flour to make biscuits but proved to be really successful. The Boy – who hates sweet potatoes – thought they were cheese scones (who am I to correct him) and wolfed them down even though they contain no cheese in them!.

Sweet Potato Muffins:

These are surprisingly delicious and incredibly quick and easy to make. They are also sugar free so a fab snack or breakfast idea.

100g plain flour

1/2 tsp baking powder

1/4 tsp cinammon

100g sweet potatoes

2 eggs

Cook the sweet potatoes by either cooking in microwave in their skins until soft and then scooping out the flesh or peeling and cutting into chunks then cooking on the stove top in a pan of water. Once cooked mash the potato. Then mix all the ingredients together and spoon into well greased muffin tins or silicone cases. Cook in the oven for 15-20 minutes on 200 degrees C until the tops are firm and springy. These taste great warm but also are delicious cold. They freeze really well wrapped individually in clingfilm.

Salmon and Broccoli fishcakes / Mash 

This recipe is great because, not only is it delicious and easy to make, but it also can be used as a spoon fed meal or, with the addition of egg, made into yummy fishcakes.

Simple Sweet Potato Fries:

I frequently make my own fries at home as they really don’t take much more time to make than frozen ones. Sweet potato fries take even less time than regular potatoes so I make them a lot. They are so simple to make and taste completely yummy as they take on a caramelised flavour once cooked.

Cut as many sweet potatoes as you want into either long fry shapes or cubes . I leave the skin on as they tend to get a bit too mushy if peeled but it’s a personal choice. Place on a well greased baking try or non stick baking sheet then sprinkle with olive oil, sea salt (optional of course if you have babies or young children) and chopped garlic. Cook at 200 degrees C for about 20-30 minutes turning once until the potatoes are soft and slightly caramelised. Totally delicious!

Lentil and sweet potato cheese pie

This is another recipe that we all (minus The Boy of course) love in my house. I found a similar recipe online but I added in the sweet potatoes to bulk it up a bit and it’s really simple to make and tastes delicious. It freezes beautifully and has iron, dairy, veg, carbs and protein all in one meal. It tastes really good cold too in slices so is great for a picnic.
