Potato & Veggie Bake

Today is MyMiniMeals Mates Monday so here is a great recipe from my friend Lauren. It’s a really easy and extremely tasty potato and vegetable bake that can be eaten on its own or as a side dish. Lauren makes it in a big dish and then slices it up in portions to freeze. I tried it in muffin cases and it worked really well too so give both options a try. You can use the vegetables listed here or change it up a bit. I think parsnips or some other kind of root vegetable could also be used and you can try adding in some other vegetables to pack in the nutrients. You could even add some grated cheese into it and onto the top if you want to add in some protein and make it a really nutritious dish. Thanks Lauren!!

Carrot and apple stars biscuits

I find the most successful recipes are usually the simplest ones. Todays MyMiniMeals Mates Monday recipe is from a lovely lady called Jude on my FB group who showed us all these delicious carrot and apple star biscuits and so far everyone who has made them has loved them. They are so easy to make and are great for a snack or dessert and freeze beautifully. They don’t contain any refined sugar but they do have some honey so aren’t suitable for under 1’s. You could remove the honey if you liked and I am sure they would be as yummy just not as sweet.

DIY Crisps

Both my kids love store bought crisps – in particular ready salted and teddy bear shaped ones. While I am a firm believer that everything is fine in moderation I do watch their salt intake and don’t want them having these crisps too often. I have never made potato crisps before but the other day I had a glut of potatoes that needed using up so thought I would try to make my own. I have made apple crisps before and they were a huge hit so I also thought I would try the same method with pears. I then found some carrots lurking in my fridge and decided to make those into crisps too. Both kids loved them – well, The Boy liked the potato and pear crisps but Little Lady loves carrots so she wolfed the carrot crisps down. Obviously it’s quicker and easier to buy crisps from a shop but these really don’t take much effort or time so have a go and let me know what you think of these DIY crisps!

Sneaky ways to hide vegetables

My last post on Cauliflower Cheese Biscuits prompted quite a lot of people to message me saying how popular they were with picky eaters and what a great idea it was to hide veg in a biscuit. I realised that I actually hide vegetables in most of The Boy’s meals as he really refuses to eat most kinds. Quick chicken and pesto stew

This recipe is unashamedly stolen from my sister. She is a really adventurous cook and makes most of her meals from scratch and whenever my kids go there they always get something yummy to eat. This week she made this delicious stew which was promptly wolfed down (including seconds) by Little Lady while her non adventurous brother would only eat a hummus sandwich. Of course I asked for the recipe and I was amazed by how easy and quick it was to make. It’s a really quick chicken and pesto stew which is full of vegetables and protein and, as it has potatoes, it doesn’t really need anything else (although Little Lady then had it again for lunch today and I added some extra couscous in with it). Anyone who is into nutrition knows that iron is really important for babies and children and therefore I’m always trying to get iron rich foods into my kids anyway I can. Any Mince Burgers

My burgers have always been like little rocks that could probably break your a bone if you dropped one on your foot! They were very tasty but way too hard. Then I went to my lovely friend’s house and her burgers were soft and moist and really delicious so she gave me her recipe. I have to admit (and I have told her this!) her recipe somehow didn’t work for me so I amended it slightly and now I am pro burger maker! Even The Boy – who is ultra fussy – eats these and declared them “yummy'”.
