Easy Sausage Hotpot

Now autumn is here it’s definitely getting chillier so I love to make stews and soups in this weather. I have to hold my hands up here and admit that this recipe goes against my whole cooking criteria as it takes (a tad) longer than an hour from start to finish – sorry! But as its as easy as all my other recipes I feel its allowed to be on here!
This delicious sausage hotpot is ideal for older children or babies who can eat large lumps – its also perfect for adults too with a bit more seasoning and a slug of vin rouge. This is actually one of a very few dishes that all of the MMM family like so I make it quite often and use a variety of sausages.  Continue reading

Easy Peasy Pasties

I love Pasties as they are an  easy “food on the go” idea and you really can put anything you want into them. The best ones originate from Cornwall but apparently you aren’t meant to call them “Cornish” pasties unless you have followed the authentic recipe which is quite detailed. I have often thought about making them but they always seemed so hard. However I saw a simple recipe online recently and, as usual, gave it my MMM twist and these ones don’t actually take much skill or time to make. This recipe uses beef mince but you can use any mince you like or even omit the meat and just make a veggie option by upping the quantities of vegetables or replacing the meat with some Quorn or meat substitute mince.  Continue reading

Simple Fish and Potato Soup

It’s getting colder which for me means I need a nice hot bowl of soup. I like to try to make the kids hot meals as often as I can and I love to make soup in the winter but as you can guess by now The Boy won’t eat anything that looks like it has a vegetable or anything remotely healthy in it so my soup options are limited. I have to also admit that at the moment Little Lady is not eating anything except sweetcorn and potatoes (I’m in denial that she is becoming a picky eater) so I am trying to think of ways to incorporate these two ingredients into everything I make! This fish and potato soup is really simple and as both of my kids do (usually) eat fish mixed in with mashed potato this isn’t too much of a deviation from that. You can use any fish you like and even the fish pie mix that you can buy in supermarkets works well here for a slightly stronger taste. It can be pureed too for little babies and when Little Lady was younger I used to add in some baby pasta or rice to it when she was starting to eat more lumps.

Me and Mr MMM loved it and I am not even going to talk about my kids’ reactions to it as quite frankly I’m over it and am burying my head in the sand!

Turkey mozzarella meatballs

For today’s MyMiniMeals Mates Monday I am posting this fabulous recipe for delicious turkey mozzarella meatballs given to me by my sister Alex. These are so easy to make and taste amazing. They are great for adults and kids and you can make the meatballs any size you want depending how comfortable your children are with lumps. They are also great mashed down for babies who need softer food. Enjoy!

Nuts about Peanut Butter

We are a peanut butter loving family. Smooth, crunchy, extra crunchy, in cakes, in snacks, on toast, in ice cream – you name it, we love it! Since having children I buy sugar free and preferably salt free peanut butter and it tastes just as nice as the sugar and salt loaded versions. Peanuts are a great source of protein so I’m more than happy to give my kids peanut butter as a snack and The Boy frequently has it on toast or with breadsticks as a bedtime snack. Sneaky ways to hide vegetables

My last post on Cauliflower Cheese Biscuits prompted quite a lot of people to message me saying how popular they were with picky eaters and what a great idea it was to hide veg in a biscuit. Ratatouille For Everyone

I get a lot of people asking what meals I can suggest that can be eaten by the whole family. One thing I love making for everyone in my house is ratatouille and I make it in 3 different textures to suit the varying palates in my house. For me and Mr. MMM I make it a bit spicy and very chunky. For Little Lady I make it with less seasoning and chopped finely. For The Boy (who as you know by now won’t touch anything that looks remotely like a vegetable) I puree it and he thinks its just pasta sauce! I also add in some chickpeas to bump up the protein content and serve it with rice, couscous, pasta, mash potato or at the moment I am loving courgette spaghetti! Quick chicken coconut curry

I love chicken curry but as I don’t like spicy food my curry of choice is always a korma. The Boy used to have a fruity chicken curry at his daycare (yes he actually ate it there!) but when I made it at home he wouldn’t eat it (no surprise there!) so I gave up making it for him. Recently though I fancied a korma and decided to try making one at home. I then realised once I made it that it was perfect for kids and, omitting salt, gave some to Little Lady who loved it. I made up the recipe from ingredients I had in the house and as it has coconut milk in it the taste is very mild and creamy. Anyone who is into nutrition knows that iron is really important for babies and children and therefore I’m always trying to get iron rich foods into my kids anyway I can. Red meat is high in iron so I try to give my kids beef 2-3 times a week. The Boy actually loves it so here are my 3 favourite beef recipes that as usual are so easy, nutritious and yummy!
