Colourful Fried Rice

We like to take the kids out for dinner at the weekend and our favourite is a well known restaurant where they serve lots of noodle and rice based dishes.  I always order a fried rice dish for Little Lady. She used to eat most of it but recently (as she is going through a very fussy annoying phase) just picks out the sweetcorn and meat from it but I keep persevering!  I thought I would try to recreate something similar at home as fried rice is a great way to incorporate carbs, protein and veg into a meal.

Turkey mozzarella meatballs

For today’s MyMiniMeals Mates Monday I am posting this fabulous recipe for delicious turkey mozzarella meatballs given to me by my sister Alex. These are so easy to make and taste amazing. They are great for adults and kids and you can make the meatballs any size you want depending how comfortable your children are with lumps. They are also great mashed down for babies who need softer food. Enjoy!

7 Days Of Lunches Part 2

A few weeks ago I posted “7 Days of Lunches” which was an account of what Little Lady ate for lunch over a 7 day period . I received a huge amount of positive feedback and people seemed to be really interested in what she ate on a daily basis. Ratatouille For Everyone

I get a lot of people asking what meals I can suggest that can be eaten by the whole family. One thing I love making for everyone in my house is ratatouille and I make it in 3 different textures to suit the varying palates in my house. For me and Mr. MMM I make it a bit spicy and very chunky. For Little Lady I make it with less seasoning and chopped finely. For The Boy (who as you know by now won’t touch anything that looks remotely like a vegetable) I puree it and he thinks its just pasta sauce! I also add in some chickpeas to bump up the protein content and serve it with rice, couscous, pasta, mash potato or at the moment I am loving courgette spaghetti!
