Colourful Fried Rice

We like to take the kids out for dinner at the weekend and our favourite is a well known restaurant where they serve lots of noodle and rice based dishes.  I always order a fried rice dish for Little Lady. She used to eat most of it but recently (as she is going through a very fussy annoying phase) just picks out the sweetcorn and meat from it but I keep persevering!  I thought I would try to recreate something similar at home as fried rice is a great way to incorporate carbs, protein and veg into a meal.

Quick chicken coconut curry

I love chicken curry but as I don’t like spicy food my curry of choice is always a korma. The Boy used to have a fruity chicken curry at his daycare (yes he actually ate it there!) but when I made it at home he wouldn’t eat it (no surprise there!) so I gave up making it for him. Recently though I fancied a korma and decided to try making one at home. I then realised once I made it that it was perfect for kids and, omitting salt, gave some to Little Lady who loved it. I made up the recipe from ingredients I had in the house and as it has coconut milk in it the taste is very mild and creamy. Easy Butternut Risotto 3 Ways

I love it when I make something and then think of other ways to use the same ingredients. I was tidying out my freezer the other day (as you do!) and found a bag of frozen butternut squash that had been lurking in the depths of my freezer. Little Lady loves butternut squash but I haven’t used it for a while so I decided to attempt to make her some risotto. You know me well enough by now to know that I have no patience in the kitchen so I wasn’t going to stand there stirring my rice for hours to get the perfect risotto so I came up with my own version that, as usual, is far easier to make than the proper one. I then decided to experiment with the cooked risotto and see what, if any, finger foods I could make from it. So here is the result of my experimenting – Easy Butternut Risotto 3 ways!

Easy Sugar-Free Rice Pudding (Cakes)

I am a member of a large parenting group on Facebook and two common questions are “what calcium rich snack can I give my child instead of their afternoon bottle” and “what healthy desserts can I give that aren’t full of sugar”. I love rice pudding and I wanted to give my kids some but all the ones in supermarkets are loaded with sugar and any recipe I have seen also contains sugar. That called for me making lots of mess and doing lots of tasting in my kitchen (Mr MyMiniMeals is now calling our kitchen “the experimental kitchen” – a la Heston) and  – Voila! – I came up with something really rather tasty.
