Tuna Melt Couscous Muffins

I love using couscous as it takes 5 minutes to cook and has an amazing cake like texture when cooked and bound with egg.

1 cup uncooked couscous (roughly 110g)

1 egg

100g grated cheese (the stronger the better)

Half a tin / a handful of frozen sweetcorn (no need to pre cook)

Half a big tin of tuna (in spring water is best but if you only have in brine just give it a rinse first)

Cook the couscous and mix all the ingredients together and put into silicone muffin tins (or well greased muffin tins) and bake for 40 mins on 180 degrees. Leave to cool in tins then turn out and enjoy! They can be reheated in a microwave for a few seconds or eaten cold. Can be frozen as above.

    I just made the tuna muffins, they seemed very dry and bland… Should I have added anything more to make them more moist?.

    • Hi I’m sorry they weren’t great. I’ve not heard this from anyone else. Maybe try cooking for less time as my muffin tins are big so take a while to cook. I find the stronger the cheese the stronger the flavor so maybe try a more mature cheese. You can also add seasoning or garlic if you wish. Hope that’s helpful. Thanks

    • Hi it really depends how big your muffin tins are. Mine are quite deep and I get 6 out of this but I think more like 8-10 is probably more realistic with normal size tins. Thanks

  4. I turned out to be ok. Used spices to make cous cous but still rather bland. Don’t think i will make it again. But its a good idea of using couscous in savoury bakes
