What’s in the MMM freezer?

Today I went to a music group with Little Lady and I was asked by 4 people how I have the time to make all the food I do. My response was simple – I make vast quantities of food and freeze it all so at any point I usually have something that I can take out the freezer and give the kids. One lovely lady named Sarah said – “Oh I would love to see what is in your freezer”. So Sarah – wish granted! Here is what I currently have in my freezer for my kids and links to the recipes for each item. As you will see many of the freezer bags are close to empty as I like to run a lot of the food down and then take a couple days a month and do a big batch cook. I hope you enjoy me baring it all!

Fruit Puree and Raisin Muffins:

I make these a lot and as you can see they are very popular in my house for breakfast and a snack.

Chicken Bolognaise:

The Boy says that this is his all time favourite thing that I make. I switch it up with what mince I use but he says my chicken bolognaise is the best. Shhhh but what he doesn’t know is that most of the time his chicken bolognaise is actually made with turkey mince.

Rice Pudding Cakes:

I love making rice pudding but this recipe is different as it contains no sugar and is versatile as can be made as a traditional pudding or made into easy to hold cakes. Again there aren’t too many left in my freezer but that may be because they somehow happen to fall into my mouth a lot!!

Tuna Melt Couscous Muffins:

According to my friends I am apparently famous for this recipe which I find bizarre! But I do make them all the time and always make sure I have a stash of them in my freezer. Looks like I need to make some more!

Lentil Bolognaise:

I have been told by lots of people that their children absolutely love this recipe and it’s usually a safe bet in my household that Little Lady will devour a whole bowlful. I usually serve with rice or couscous and Mr MMM and I often have it for dinner too. As you can see I have just made a huge batch so we will be eating Lentil bolognaise for a while!

Courgette Muffin Loaf:

This recipe came about as I made a mistake on my online grocery shopping and ordered way too many courgettes than I intended. It was such a success that I now make this quite often and it makes a great snack and meal.

3 Ingredient Sweet Potato Biscones:

These are a firm favourite with both my children so when The Boy declares he likes something I make it a lot! I give them to my kids as a snack and The Boy often eats a couple as a bedtime snack as they are really filling due to the sweet potato and contain no sugar so won’t keep him awake! These take no time at all to defrost just left out on the side or take 20-30 seconds  in a microwave.

Sweetcorn Cake: 

This recipe was the result of yet another online grocery ordering mistake (I really am not very good at online shopping!). Yet again it was a yummy success and I even often have it for lunch.
