Easy Butternut Risotto 3 Ways

I love it when I make something and then think of other ways to use the same ingredients. I was tidying out my freezer the other day (as you do!) and found a bag of frozen butternut squash that had been lurking in the depths of my freezer. Little Lady loves butternut squash but I haven’t used it for a while so I decided to attempt to make her some risotto. You know me well enough by now to know that I have no patience in the kitchen so I wasn’t going to stand there stirring my rice for hours to get the perfect risotto so I came up with my own version that, as usual, is far easier to make than the proper one. I then decided to experiment with the cooked risotto and see what, if any, finger foods I could make from it. So here is the result of my experimenting – Easy Butternut Risotto 3 ways!

Lots of Lentils Part 2

A couple of weeks ago I posted some lentil recipes and I had so many to that I love that I decided to split them in two and keep you all hanging for the second lot. Well here they are – more “Lots of Lentils”! These 3 recipes are totally delicious and the first is great for baby’s first taste of protein as its a very simple tasting dish. The second is actually something I make all the time for the MyMiniMeals family and something that even The Boy will eat. Quick chicken and pesto stew

This recipe is unashamedly stolen from my sister. She is a really adventurous cook and makes most of her meals from scratch and whenever my kids go there they always get something yummy to eat. This week she made this delicious stew which was promptly wolfed down (including seconds) by Little Lady while her non adventurous brother would only eat a hummus sandwich. Of course I asked for the recipe and I was amazed by how easy and quick it was to make. It’s a really quick chicken and pesto stew which is full of vegetables and protein and, as it has potatoes, it doesn’t really need anything else (although Little Lady then had it again for lunch today and I added some extra couscous in with it). Courgette / Zucchini Muffin Loaf

I love online shopping and get a delivery of groceries once a week. This week I used a new company and made quite a large mistake when ordering courgettes (zucchini for all my non UK friends!). Instead of ordering 4 courgettes I ordered 4 bags of them and now have 16 courgettes to cook with! So I’m desperately trying to think of ways to use them all up. The Boy loves cucumber but he wasn’t fooled when I tried to pass off a courgette as a cucumber sadly. I then had a thought I could make some kind of savoury muffin using them. Continue reading

Lots of lentils

I love cooking with lentils as they are so easy to make and are a great source of protein. They work brilliantly for vegetarian recipes and they are also a simple way of introducing protein to babies once you start weaning. With The Boy I only gave him one lentil puree recipe but with Little Lady I have been more adventurous and give her lots of lentils in all shapes and forms. 3 Easy Tuna Recipes

I love tinned tuna and luckily both my kids do too. It’s such an easy ingredient to work with as it’s already cooked and all you need to do is think of different ways to use it. I prefer to buy it in spring water rather than brine but if you can only get brine then I would try rinsing it off under some water first so it isn’t too salty. Also the one in sunflower oil is great for kids to add in a bit of fat for them.  My 3 Easy Tuna Recipes are really so simple and taste totally delicious. In fact Mr My Mini Meals keeps asking me to make them for his dinner as he likes them so much. I hope you enjoy them as much as all the My Mini Meals family do! Continue reading

7 days of Breakfasts

I got such an overwhelmingly positive response to my 7 Days of Lunches post that I thought I would show you what Little Lady has for breakfast over a week too. It’s not as varied as her lunches admittedly but I do try to give her different things as much as I can.
