Easy Sausage Hotpot

Now autumn is here it’s definitely getting chillier so I love to make stews and soups in this weather. I have to hold my hands up here and admit that this recipe goes against my whole cooking criteria as it takes (a tad) longer than an hour from start to finish – sorry! But as its as easy as all my other recipes I feel its allowed to be on here!
This delicious sausage hotpot is ideal for older children or babies who can eat large lumps – its also perfect for adults too with a bit more seasoning and a slug of vin rouge. This is actually one of a very few dishes that all of the MMM family like so I make it quite often and use a variety of sausages.  Continue reading

1 sauce – 4 ways

As a busy mum of two I always like to find easy ways of preparing quick meals for them. I have to admit they do consume their fair share of fish fingers and oven chips but I do really try, when I have time, to give them homemade stuff. I love it when I find one recipe that I can use in lots of ways and this is exactly what I do with my Tomato and Vegetable Sauce (I’m going to call it TVS in this post for ease). I make batches and batches of this sauce and freeze it in portions or weaning trays. It’s then just a matter of popping some into the microwave or in a fridge to defrost then using it as I wish. It also means I can get some vegetables into The Boy who, as you know by now, is a vegetable hater. Here are some ideas of how I use it in my cooking but I’m sure there are lots more so let me know what you come up with!

Simple Fish and Potato Soup

It’s getting colder which for me means I need a nice hot bowl of soup. I like to try to make the kids hot meals as often as I can and I love to make soup in the winter but as you can guess by now The Boy won’t eat anything that looks like it has a vegetable or anything remotely healthy in it so my soup options are limited. I have to also admit that at the moment Little Lady is not eating anything except sweetcorn and potatoes (I’m in denial that she is becoming a picky eater) so I am trying to think of ways to incorporate these two ingredients into everything I make! This fish and potato soup is really simple and as both of my kids do (usually) eat fish mixed in with mashed potato this isn’t too much of a deviation from that. You can use any fish you like and even the fish pie mix that you can buy in supermarkets works well here for a slightly stronger taste. It can be pureed too for little babies and when Little Lady was younger I used to add in some baby pasta or rice to it when she was starting to eat more lumps.

Me and Mr MMM loved it and I am not even going to talk about my kids’ reactions to it as quite frankly I’m over it and am burying my head in the sand!

Easy Bake Bagels

I am still obsessing over my discovery of “2 Ingredient Dough” which I used in my Easy Peasy Pizza Parcels and 3 Ingredient Fruit Scroll recipes. I have been experimenting lots with it and today I have been making bagels. My household is a bagel loving one and we buy them every week and have them for lunch most weekends. But they aren’t cheap and most contain a lot of salt so I tried to make my own and, with 2 Ingredient dough, they couldn’t have been easier. And the bonus is that they taste totally yummy! I made a few versions – plain, cheese and onion (Mr MMM favourite type of bagel) and they all worked so well so have a go and let me know what you think!

Sneaky ways to hide vegetables

My last post on Cauliflower Cheese Biscuits prompted quite a lot of people to message me saying how popular they were with picky eaters and what a great idea it was to hide veg in a biscuit. I realised that I actually hide vegetables in most of The Boy’s meals as he really refuses to eat most kinds. Ratatouille For Everyone

I get a lot of people asking what meals I can suggest that can be eaten by the whole family. One thing I love making for everyone in my house is ratatouille and I make it in 3 different textures to suit the varying palates in my house. For me and Mr. MMM I make it a bit spicy and very chunky. For Little Lady I make it with less seasoning and chopped finely. For The Boy (who as you know by now won’t touch anything that looks remotely like a vegetable) I puree it and he thinks its just pasta sauce! I also add in some chickpeas to bump up the protein content and serve it with rice, couscous, pasta, mash potato or at the moment I am loving courgette spaghetti! Quick chicken coconut curry

I love chicken curry but as I don’t like spicy food my curry of choice is always a korma. The Boy used to have a fruity chicken curry at his daycare (yes he actually ate it there!) but when I made it at home he wouldn’t eat it (no surprise there!) so I gave up making it for him. Recently though I fancied a korma and decided to try making one at home. I then realised once I made it that it was perfect for kids and, omitting salt, gave some to Little Lady who loved it. I made up the recipe from ingredients I had in the house and as it has coconut milk in it the taste is very mild and creamy. Lots of Lentils Part 2

A couple of weeks ago I posted some lentil recipes and I had so many to that I love that I decided to split them in two and keep you all hanging for the second lot. Well here they are – more “Lots of Lentils”! These 3 recipes are totally delicious and the first is great for baby’s first taste of protein as its a very simple tasting dish. The second is actually something I make all the time for the MyMiniMeals family and something that even The Boy will eat. The third is a delicious curry-esque recipe that is packed full of protein and iron as it has spinach in it and again is really good for babies who are just starting to taste more flavours and ingredients.  Continue reading

Quick chicken and pesto stew

This recipe is unashamedly stolen from my sister. She is a really adventurous cook and makes most of her meals from scratch and whenever my kids go there they always get something yummy to eat. This week she made this delicious stew which was promptly wolfed down (including seconds) by Little Lady while her non adventurous brother would only eat a hummus sandwich. Of course I asked for the recipe and I was amazed by how easy and quick it was to make. It’s a really quick chicken and pesto stew which is full of vegetables and protein and, as it has potatoes, it doesn’t really need anything else (although Little Lady then had it again for lunch today and I added some extra couscous in with it).
