Lentil and sweet potato cheese pie

This is another recipe that I found online but made some slight amendments and I have to admit I think it tastes better than the original. Its a carb filled, protein packed pie that is, yet again, so easy to make.

My friends all laugh at me as I am ever so slightly (ok very very) obsessed with giving my kids carbs with every meal. I believe (rightly or wrongly) that it helps them sleep better (and when they sleep Mummy rests) but in all honesty I think it plays to the lazy cook in me as if a dish has carbs in it I don’t need to make a side dish too! The original recipe for this yummy pie had no potatoes in it which meant I was always giving it with some pasta or mash etc. Then one day I decided to see what it was like with sweet potato added and some veg and lo and behold it was even more delicious and filling. Little Lady wolfs it down very happily although I have yet to persuade The Boy to even try a tiny bit but I keep trying!

150g dried red lentils

1 large sweet potato

1 egg

100g strong cheese – grated

Half a small onion – diced finely

1 clove of garlic – diced finely

1.5 tbsp breadcrumbs

1 tbsp butter

Optional

2 florets of broccoli – cooked and diced finely

OR

1 small carrot cooked until soft and diced finely

OR

any other cooked veg – diced finely

Cook lentils in a pan with water covering to about an inch above them – cook until soft (this takes about 15-20 mins). Cook sweet potato in microwave or in chunks in a pan then mash it. Mix all the ingredients together then spoon into a WELL greased cake tin (when I say WELL greased I mean REALLY well greased as this recipe is very very sticky). I used a springform cake tin but as long as you grease any cake tin really well it should be fine. Cook on 180 for 35 mins or until the top of the pie feels firm when lightly prodded. Take out of the oven and leave to cool for 15 mins before turning out and cooling. Cut into wedges and serve warm or cold. I freeze mine in wedges wrapped in clingfilm then either take out a few hours before eating or zap in microwave.

  1. I was hoping for an upgraded cheese lentil recipe. We love this. We’ve added grated courgette and marrow to ours and a bit of extra cheese and it goes down an absolute treat! Thank you!

  2. This just went down a treat with a 13 month old and a 9 month old. Had to offer seconds!!!!
    Froze mine in aluminium foil….should I rewrap tomorrow?
