Very veggie pancakes

I frequently am trying to get The Boy to eat vegetables but he pretty much only eats cucumber, broccoli and the odd carrot here and there. I have tried with most other veggies but more often than not he feigns a stomach ache or makes such a face that I just give up and give him the usual suspects. I do sneak vegetables into most stuff I make him and he is aware of this and still eats it up but when faced with anything looking like a vegetable its generally a complete disaster. So this recipe is purely for Little Lady (and Mr Mini Meals just wolfed down half a batch too) as I know she loves her veggies and will eat anything as long as it has some green stuff somewhere.  

This is a stupidly simple vegetable pancake recipe that is probably in every baby cookbook or baby food website but as you know I am obsessed with carbs so my version has sweet potato in it just to bulk it up a bit. As they have sweet potatoes and veg all in one package I just give them to Little Lady as a complete meal with no need for any other sides.

10 tbsp plain flour

100 ml milk (you can use soy milk here too)

3 florets raw broccoli – chopped finely

2 tbsp frozen peas

2 tbsp sweetcorn (frozen or tinned)

50 g finely grated raw sweet potato (grate it finely otherwise it won’t cook so easily)

1 egg

Mix the flour, egg and milk together to make a thick ish batter. Mix all the veggies into the batter and add some seasoning if you wish. Heat some oil in a frying pan and spoon small “dollops” of the mixture onto it. Cook for 2.5 minutes either side until the pancake is brown and the mixture has set. Eat immediately or cool. These can be frozen wrapped in clingfilm and taken out the freezer a couple hours before you eat them.

NB: Feel free to use any veg you have – my recipe is just a suggestion of things that I find work well together.
